Ingredients

Equal parts ground pork, veal, beef 1/3 to 1 lb.

2 to 6 stalks celery washed

1/2 to 1 1/2 sweet onion

2 to 4 cloves garlic

turkey or chicken gibbets

1 to 2 slices of bread

1 to 4 Tbsp poultry seasoning

In small sauce pan cook giblets with a grinder grind gibbets, celery, garlic, and onion add browned meat to ground giblets and vegetable into a large sauce pan, add poultry seasoning and brown through, add bread in peaces to reduce liquid
