Ingredients

2 zucchinis, sliced long into two “boats”

12 mushrooms, diced

2 green onions, sliced

2 T butter

1/2-3/4 C panko bread crumbs

2 oz shredded cheddar cheese

4 T chredded parmesan cheese

Preparation

Hollow-out zucchini. Steam for 5 mins or so till softened. Sautee mushrooms and onion in butter. Combine bread crumbs and cheddar, and stir in cooled mushroom mix, scoop into the squash and sprinkle with parm. Bake a bit, broil a bit.
