Ingredients
4 med zuchinni
1 med tomato
1 small can diced Ortega chilis
1 ½ cups grated jack cheese
½ tsp salt
1/8 tsp pepper
½ tsp oregano
1 Tablespoon parsley
Garlic salt, grated parmesan cheese
Preparation
Trim zucchini ends.Cook whole in boiling salted water until barely tender, about 10 mins. Drain & cool - don't overcook or they will be to limp.Cut in half length wise.Scoop out centers and chop it up.Dice tomatoes and combine all other ingreds.Spoon into zucchini shells.
Sprinkle with parmesean cheese. Place in shallow pan. Bake at 400 degrees for 20 minutes.
