Ingredients

 4 med zuchinni





 1 med tomato





 1 small can diced Ortega chilis





 1 ½ cups grated jack cheese





 ½ tsp salt





 1/8 tsp pepper





 ½ tsp oregano





 1 Tablespoon parsley





 Garlic salt, grated parmesan cheese

Preparation

  •      Trim zucchini ends. 
    
    
  •      Cook whole in boiling salted water until barely tender, about 10 mins.  Drain & cool - don't overcook or they will be to limp. 
    
    
  •      Cut in half length wise.
    
    
  •      Scoop out centers and chop it up.
    
    
  •      Dice tomatoes and combine all other ingreds.
    
    
  •      Spoon into zucchini shells.
    
    

Sprinkle with parmesean cheese. Place in shallow pan. Bake at 400 degrees for 20 minutes.
