Ingredients
4 medium tomatoes
1/2 cup of bread crumbs
3 TB red wine vinegar
4 anchovy fillets
1 garlic clove- peeled
1 TB capers drained
1 hard boiled egg yolk
1/2 cup fresh parsley- minced
1/3 cup of olive oil
Preparation
remove pulp from tomatoes - or just quarter them and pour sauce over tomatoes
soak bread crumbs in vinegar chop egg, capers, anchovies, parsley and garlic - add to bread crumbs stir with wooden spoon and drop olive oil in beating slowly
