Ingredients

3 green peppers, halved lengthwise

3 firm tomatoes, halved

2 tbsp. oil

two tbsp bread crumbs

2 soya burgers, thawed, drained and mashed

1/2 cup chopped onion

1 cup chopped mushrooms

1 clove garlic, minced

1 cup shredded extra sharp Cheddar cheese

1/4 tsp. dry mustard

salt to taste

1/8 tsp. chili powder

Preparation

Remove seeds from peppers. Cut tomatoes into two and scoop out the middle. Boil water in a large pot and drop the green peppers in it. Cook for about 2 mts. Do not overcook and make sure the peppers remain on the firm side. Heat oil in a skillet. Add onion. Cook for about 5 minutes. Add tomato pulp. Cook till dry. Add mushrooms, mashed burger and garlic. Cook for 6 minutes. Stir often. Remove from fire and let it cool. Preheat oven to 350 degrees. Stir cheese and remaining ingredients into the vegetables. Divide the mixture among pepper and tomato halves. Sprinkle bread crumbs. Cover and bake for about 15 minutes or till peppers are fork tender. Serve immediately.
