Ingredients

1 jar Spike’s santa fe packing company black bean and corn salsa

1/2 lb lean ground beef

3/4-1 cup cooked white rice

1/2 cup shredded Colby and Jack cheese

1 Tbsp chopped cilantro

1/4 cup water of chicken broth

1 large bell pepper cut in half lengthwise, cored and seeded

Preparation

Cook beef in a skillet until completely brown. Pour off fat. Add spike’s santa fe packing co black bean and corn salsa, rice, cheese and cilantro. Mix well. Fill pepper halves with burger cheese micture. Pour water into an 8 inch square baking dish. Place stuffed peppers in the dish. Cover with foil. Bake at 400 degrees F for 30 minutes.
