Ingredients

5 green peppers

2 C cooked rice

3 med tomatoes, peeled and chopped

1 1/2 c diced cheddar cheese

10 slices of bacon

1/4 t salt, pepper to taste

Preparation

  1. Cut tops off peppers, seed, and parboil 5 minutes. Drain and place in shallow baking dish.
  2. Mince bacon and brown in skillet. Remove from heat,
  3. Add cooked rice, tomatoes, cheese, and salt. Stir gently until ingredients are blended, but not pasty.
  4. Fill peppers and top with cube of cheese and sprinkle of paprika.
  5. Bake 350 degrees about 15-20 minutes.
