Ingredients
5 green peppers
2 C cooked rice
3 med tomatoes, peeled and chopped
1 1/2 c diced cheddar cheese
10 slices of bacon
1/4 t salt, pepper to taste
Preparation
- Cut tops off peppers, seed, and parboil 5 minutes. Drain and place in shallow baking dish.
- Mince bacon and brown in skillet. Remove from heat,
- Add cooked rice, tomatoes, cheese, and salt. Stir gently until ingredients are blended, but not pasty.
- Fill peppers and top with cube of cheese and sprinkle of paprika.
- Bake 350 degrees about 15-20 minutes.
