Ingredients
1 1/2 tbsp unsalted butter
1 1/2 cups herb stuffing mix
2 ribs of celery, diced
2 plum tomatoes, cored, seeded, and diced (about 1 cup)
1 pkg ground chicken (about 1 lb.)
3/4 tsp. salt
5 red or green bell peppers, tops removed & reserved, cored.
Preparation
- Combine butter and 3/4 c. H2O in med.sized microwaveable bowl. Mic. for 1 min. Add stuffing mix and cover bowl, venting 1 side. Mic. an additional 1 1/2 mins. Stir with fork.
- In large bowl, combine celery, toms., and ground chicken. stir until blended. Add stuffing and salt. Stir to combine.
- Divide stuffing evenly among peppers. Replace pepper tops, fit into slow cooker and add 1 c. H2O. Cover and slow cook for 6 hours on low. remove with tongs and serve.
