Ingredients

3 Lbs White Button Mushrooms

1/2 cup minced flat-leaf parsley

1 1/2 cups grated manchego cheese or parmesan may be substituted if manchego is unavailable.

6 cloves garlic, minced

1 tbls white pepper

salt and pepper to taste

Preparation

Preheat Oven to 350. Clean mushrooms with dry towel to remove any dirt. Remove stems and reserve. Combine stems with remaining ingredients in food processor and season with salt and pepper. Pulse until mixture is homogenous. Stuff mixture into caps and bake in oven until soft and brown, about 15-20 minutes.
