2-Main Lobsters(cut horizontally

but not all the way) 1lb.small bay scallops 1lb.shiitake mushrooms (sliced) 1/2cupbread crumbs 2shallots 2Tblsp.Olive

pepper

Preparation

Wash and pat dry lobsters,place on backs and slightly crack open middle to prepare for stuffing,set aside.Heat skillet with oil,chop shallots,and mushrooms and saute until tender.Add scallops and continue cooking 5 minutes on medium heat.Add breadcrumbs and cook 2 minutes longer.Cool 10 min.Spoon mixture into lobsters using the palm of your hand.Cover with foil and bake at 375 degrees in preheated oven for 40 minutes.Open foil and let broil in oven for 5 minutes.Serve with lemon wedges and a glass of white wine.(Beer may be served for a more casual meal).
