SALT AND PEPPER TO TASTE
Preparation
CUT EGGPLANT IN HALF, LONGWISE, SPRINKLE WITH SALT AND SLICE DIAGONAL CUTS IN THE EGGPLANT, SIT FOR UP TO 30 MIN. SAUTE EGGPLANT IN SAFFLOWER OIL OVER MED-LOW HEAT ABOUT 10 MIN, UNTIL GOLDEN. NEXT IN SAME PAN, ON MED HEAT SAUTE GARLIC, ONIONS AND GREEN PEPPERS UNTIL SOFT, ABOUT 10 MIN. THEN ADD THE TOMATOES, SUGAR, SALT & PEPPER, AND LIME JUICE. COOK UNTIL REDUCED. SPOON SAUCE ON EGGPLANTS BAKE AT 375 FOR 30MIN. COVER W/ ALUMINUM.
