Preparation
after you carve the eggplant cut up the inside in tiny pieces placing all in a boul with eggs the wet stail bread all crumbled up garlick parsely fresh mozzarella salt pepper and olive oil. place the eggplant inside a pot with olive oil and saute’ all around it. after you see that the mozzarella start to melt add some tomato from a jar or fresh all cut up and let cook until you can pierce with a fork when you can do that the eggplant are ready to serve with good italian bread and good wine buon appetito sincerely teresa la rocca
