Ingredients
2 Baking potatoes - washed and pierced
1/8 cup Sour cream
1/8 cup Crumbled blue cheese
1/8 cup Butter, room temp
3/4 tsp Garlic, minced
3/4 tsp Rosemary, fresh chopped
Preparation
Wrap potatoes in paper towels, cook in microwave on high for 12 minutes, turning and rotating once
Cut top third from potato and scoop flesh into bowl
Add sour cream, blue cheese, butter, garlic and rosemary - Mash
Stuff mixture into shells - can be covered and chilled for 1 day
Base potatoes on baking sheet 25 minutes
Top with sour cream and blue cheese
