Ingredients

2 Baking potatoes - washed and pierced

1/8 cup Sour cream

1/8 cup Crumbled blue cheese

1/8 cup Butter, room temp

3/4 tsp Garlic, minced

3/4 tsp Rosemary, fresh chopped

Preparation

  • Wrap potatoes in paper towels, cook in microwave on high for 12 minutes, turning and rotating once

  • Cut top third from potato and scoop flesh into bowl

  • Add sour cream, blue cheese, butter, garlic and rosemary - Mash

  • Stuff mixture into shells - can be covered and chilled for 1 day

  • Base potatoes on baking sheet 25 minutes

  • Top with sour cream and blue cheese
