Ingredients
1 medium baking potato
10 ounces frozen chopped spinach
1/2 cup broccoli, chopped
1 tablespoon green onions, finely chopped
1-1/2 ounces low-fat cheddar cheese
dash salt
dash pepper
dash garlic powder
Preparation
- Bake the potato at 425 degrees for 45 to 60 minutes, or microwave for about 8 minutes and then let stand for 3 to 5 minutes.
- When the potato is done, scoop its insides into a small bowl, reserving skin.
- Add the spinach, broccoli, green onions, cheese, and seasonings. Mash.
- Fill the potato skin with the mixture and bake in the oven 10 minutes longer to blend the flavors.
