Ingredients
1 pound fresh mushrooms
¼ C freshly grated Parmesan
¼ C dry bread crumbs
¼ C finely chopped scallions
1 t. dried thyme, crushed
¼ t. salt
1/8 t. ground black pepper
1 garlic clove, minced
1 t sherry
Preparation
Preheat oven to 350. Carefully remove stems from mushrooms. Try not to break mushroom caps. Set caps aside. Mince mushroom stems and combine with bread crumbs, thyme, pepper, sherry, Parmesan, scallions, garlic and salt. Press mixture into mushroom caps, rounding the tops. Place on ungreased cookie sheet and bake for 20 minutes.
