Ingredients

6 medium artichokes

STUFFING

3/4 c pine nuts

3/4 c raisins

1 cup fresh Parmesan cheese, grated

18 green onions, chopped

salt and pepper to taste

Preparation

  1. Trim and clip artichoke leaves; remove center leaves and chokes.

  2. Mix stuffing ingredients. Stuff artichokes.

  3. Place artichokes and 2 cups of water in pot; cover and cook until tender (about 30 minutes at medium heat).
