Ingredients

4 large or 8 small artichokes

1 clove garlic, chopped

2T minced parsley

4T grated parmesan cheese

1 c. fine soft bread crumbs

1/4 tsp. pepper

1/2 tsp. salt

Preparation

Wash artichokes and cut off stems and 1/4 in. off tops. Stand in 1 1/2 in. boiling water (salted) and cook 30 mins. Drain.

Sauté garlic and add remaining ingredients. Stuff artichokes tops and leaves. Place in a baking dish and cover dish with 1/4 in. water. Pour 2 T olive oil over artichokes (optional). Cover and bake at 350 degrees until bases of leaves are very tender.
