Ingredients
2 cups cooked brown rice
2 cups almond milk (cow or rice milk would work too)
~1+ Tbsp honey
~1 tsp cinnamon
~1/2 tsp nutmeg
~1/2 cup chopped dried apricots
~1/2 cup chopped medjool dates
~1/2 cup sliced almonds
Preparation
In medium saucepan, put everything but the nuts into a medium saucepan and bring to a light boil.
Reduce heat to a light simmer, stirring regularly, until liquid is absorbed - about 20 mins.
(Halfway through, taste and adjust sweetness with more honey if needed)
Stir in almond slices and garnish with more cinnamon, if desired.
Can serve warm or room temp.
