Salad

Strawberry and Spinach Salad

Directions:

In a large salad bowl, toss together the spinach, almonds, strawberries, and cucumber. In a small glass dish or jar with a tight-fitting lid, combine the lemon juice, vinegar, sugar, oil, and poppy seeds. Whisk in the glass dish or shake if using a jar.

Dress the salad right before serving.

Nutritional Information: Per serving (1 1/2 cups): 100 calories,

4 g fat (0 g saturated, 0 g trans), 0 mg cholesterol, 55 mg sodium, 15 g carbohydrate, 4 g fiber, 3 g protein.

• 1 whole cucumber, peeled, seeded, and finely diced

• Juice of half a lemon

(2 tablespoons)

• 1 tablespoon white wine vinegar

• 2 tablespoons sugar

• 1 tablespoon vegetable oil • 1 teaspoon poppy seeds

Healthy Cooking Tips

This recipe was already a winner, with plenty of veggies and fiber-rich strawberries and just a small amount of (heart-healthy) oil. The only change needed was to decrease the sugar in the dressing

to lower the carbohydrate count (and reducing the vinegar a little to compensate). With all those naturally sweet strawberries, you’ll never miss the sugar!
