Ingredients

12 cups bite size pieces of spinach

1 pint (2 cups) sliced strawberries

2/3 cup chopped scallions

2 cans (11 oz each) mandarin oranges - drained

1/4 cup pine nuts

Orange Honey Dressing:

1/4 cup orange juice

1/4 cup honey

2 tablespoons vegetable oil

2 tablespoons Dijon mustard

Preparation

  1. Prepare Orange honey dressing.
  2. Toss dressing with remaining ingredients except pine nuts.
  3. Sprinkle with pine notes (toast to enhance their flavor)
