Ingredients
1/2 cup flour
1/2 cup whole wheat flour
1/4 cup cornmeal
3 T sugar
1/2 t baking powder
1/2 t salt
1/4 cup chilled butter, cut into small pieces
3 T ice cold water
2 1/2 cups chopped rhubarb
1 1/2 cups cut up strawberries
1/3 cup sugar
2 T cornstarch
Preparation
Combine flours, cornmeal, sugar, baking powder and salt. Cut in butter with a pastry cutter. Mix ice water in with a fork. Set aside. Combine rhubarb, strawberries, sugar and cornstarch, and spread into a baking dish. Crumble dough over the fruit. Bake at 400F for 30 minutes or until fruit is bubbly and topping is browned. Serve warm or room temperature.
