Ingredients

1 lb strawberries, sliced

2 c. (1/2 inches thick) slices rhubarb

1/3 c. packed light brown sugar

2 tbsp water

4 c. light vanilla ice cream

Preparation

  1. Combine first 4 ingredients in a med saucepan, bring to a boil. Reduce heat to medium and simmer 6 to 7 minutes or until rhubarb softens. Remove from heat and let stand 5 mins. Serve warm strawberry mixture over ice cream.
