Ingredients

1 small head radicchio

1 head endive, washed trimmed and sliced

1 pint strawberries, hulled, stemmed and quartered

1/4 cup walnuts

Dressing:

1 shallot, minced

2 tbsp rice wine vinegar

2 tbsp balsamic vinegar

2 tbsp canola oil

3 tbsp olive oil

Fresh pepper to taste

Preparation

spin greens dry. Combine with strawberries and toss to mix. Combine all ingredients for dressing in a food processor and pulse til smooth. Adjust seasoning. Toss greens with half the dressing and add more as neecessary. Sprinkle with walnuts. Reserve any leftover dressing.
