Ingredients
1 cup sugar
6 tbsp butter
2 eggs
2 tsp vanilla
1 1/2 cups flour
1 1/4 tsp baking powder
1/2 cup milk
grated zest of two lemons
Buttercream:
2 sticks butter
1 tsp vanilla
1/3 cup strawberry jam
pinch of salt
6 cups powdered sugar
2-3 tbsp milk
Preparation
Preheat oven to 350.
Cream butter, sugar and eggs until fluffy. Add vanilla and zest.
Combine dry ingredients. Add 1/2 dry ingredients, mixing until just combined, then add milk. Add remaining dry ingredients.
Bake 20-25 minutes.
Buttercream: Beat butter and vanilla until creamy. Mix in jam and salt. Add sugar 1 cup at a time. Add 1 tbsp milk at a time.
