Ingredients

2 egg whites

1 cup frozen strawberries ( no sugar added) cut into halves

3/4 cup sugar or sugar substitute

1 Tbsp lemon juice

1 8z tub of cool whip

6 shortbread cookies broken into pieces

3 9-inch shortbread pie crusts

1/2 tsp vanilla extract

Preparation

In a large bowl, combine strawberries, sugar, egg whites and lemon juice. Beat on high for 15 minutes or until fluffy.* Add vanilla extract. Fold in Cool Whip to the mix. Stir until blended. Pour into shortbread crusts. Add crushed cookies to top. Place in freezer for 2 hours or until solid. Best served frozen or slightly thawed for easier cutting.

  • For best results, use stand mixer with paddle attachment.
