10 crepes, dessert pre-made
2 cups fresh strawberries rinsed, hulled, and sliced
1/4 cup granulated sugar
8 ounces cream cheese, softened
1/4 cup confectioners’ sugar
1 tsp vanilla
I use splenda and light cream cheese when I make this for my father who is diabetic.
Preparation
Reserve 1 cup of the strawberries. In a small bowl, combine remaining strawberries and 1/4 cup granulated sugar; refrigerate to chill thoroughly. In a medium bowl, beat cream cheese and powdered sugar until smooth and well blended. Stir in reserved strawberries. Warm crepes-1 min. in a toaster oven. Spread about 1 tablespoon strawberry and cream cheese mixture over each crepe. Roll up. Serve topped with the chilled sweetened strawberries. Serve strawberry crepes with whipped cream or creme fraiche. Garnish with mint leaves.
