Ingredients

10oz spinach, rinsed,drained, strained,corarsley torn.

1lb. strawberries,hulled,halved or sliced.

Lemon Dressing:Makes

1/4 c sugar

juice of large lemon

1 egg yolk

6T vegetable oil

Preparation

Place spinach in bowl, top with strawberries and chill. Dressing:Add sugar and lemon juice in bowl and whisk until dissolved. Add yolk and whisk until sugar is dissolved. Add oil 1 t at a time, whisk until thick and creamy.Cover and refidgerate. To serve rewhisk if necessary.Pour over salad and toss gently.
