Ingredients
2 Tablespoons olive oil
1 14oz can tomatoes, whole and peeled
1 teaspoon sugar
salt
freshly ground black pepper
4 eggs, beaten
Option: Feta cheese, scallions, hot sauce
Preparation
Heat the olive oil in a skillet over medium heat. Strain the tomatoes and press a little to get the excess liquid out. Add the tomatoes, sugar, salt and pepper to the olive oil. Cook the mixture for about 30 mins, stirring occasionally, until all the liquid has evaporated and the mixture has reduced to a thick consistency. Add the eggs and stir constantly until set. Serve immediately in pan or transfer to a dish.
Option: add feta, scallions and hot sauce at the end
