Ingredients

Nuoc Cham Style Dressing

1/4 c rice wine vinegar

1/4 c fish sauce

1/4 c water

1 Tb sugar

1 Tb sambal olek

1/2 carrot - shredded

Marinade Ingredients

1 # shrimp (as you like them)

1/3 # large dice Tasso

4 Tb fish sauce

1 Tsp sugar

Main Ingredients

2 Tb grapeseed or peanut oil

1 small onion, sliced

4 cloves garlic, sliced

1 Tb red pepper flakes (or actual peppers if you have them on hand)

1 diced lemongrass stalk(can use 2 Tb dry if you like)

1/2 c or more cut basil or mint

Preparation

dressing: put ingredients together and mix. Set aside in a small bowl

marinade: mix fish sauce and sugar in a small bowl to combine. Pour over shrimp and tasso in larger bowl. Cover and let marindate for 20-30 mins

cooking!: Heat wok over high heat with oil. When it begins to smoke, put in onion, garlic, and cut for 20 seconds. Put in red pepper flakes and lemon grass and cook for about a minute longer until garlic begins to brown. Throw in shrimp, tasso and marinade and cook until shrimp is just turning pink everywhere (or should i say cook to taste) Toss in basil and mix until wilted.

Serve over greens, sliced cabbage, rice or just by itself with a piece of crusty bread to soak up the marinade.
