Ingredients

Thai long rice (3-4 cups)

Caper (2 tbsp)coarsely chopped

Fresh rosemary (1 tbsp), mint (1 tbsp), oregano (1 tbsp), parsley (a handful), all chopped

Sun dried tomato in oil (6 pcs) chopped

Ham two slices, cut into small pieces

garlic (1 clove), bird-eye chilli (1), chopped

3 tbsp olive oil, salt and pepper to season.

Preparation

  1. Cook the rice: cook the rice with less water and add olive oil to the pot when cooking. Then the rice will be less sticky than usual

  2. Add oil to the pan and add garlic and chilli to stir fry until you can smell the garlic

  3. Add the herbs to the pan, stir fry for 1 minute

  4. Add sun-dried tomato and stir fry for another 1 minute

  5. Add the cooked rice and stir fry vigorously for three minutes.

  6. Add the ham before switching off the fire.
