Ingredients
Potatoes
Fresh Basil
1 Large Onion
1 Can of Whole Tomatoes
Grated Cheese
Garlic
Garlic Powder
Dried Oregano
Preparation
Cut Onion into strips cut with the grain. Chop Garlic Fine. Saute Onion in Olive Oil, add salt to sweat the onion. Add Garlic, Then Large Chunks of Potatoes. Cook for a few minutes to spread the flavour around. Add tomatoes and juice from can slice tomatoes into strips.
In a large glassware with lid transfer from skillet. Add Grated Cheese, Fresh basil (rough chop) and stir. Drizzle with Olive Oil. Bake at 350 for 2 Hours. Can be served whole or you can do a rough mash and add a dolop of sour cream on top.
