Ingredients
5 lbs. potatoes
1 large sweet potato
6 large onions
3 eggs
1 t salt
1 t pepper
5 T Matzo meal
Preparation
- Dice half onions and saute in a mix of butter and olive oil.
- Peel potatoes and prepare onions.
- Shred potatoes and onions and put in seperate bowl.
- Put chopping knife in food processor. Chop onion and potatoe mix, add 1 egg with each bowl full.
- Add salt, pepper and Matzo meal.
- Put into buttered cassorole dish or muffin pan.
- Cook at 375 for 1 hour.
