Ingredients

1 20oz fresh 3 cheese tortellini

1/2 c of mayonnaise

1/2 c olive oil

1/4 c red wine vinegar

1 1/2 tsp dijon mustard

1 tsp sugar

1/2 tsp salt

1/4 tsp pepper

1/4 tsp dried oregano

1/4 tsp dried thyme

1/4 tsp dried basil

1 garlic clove

2 c chopped parsley

1 13 oz artichoke hars in water, drained and chopped

3/4 c chopped green onions

1/2 c drained oil packed sun dried tomatoes, chopped

1/2 c kalamata, olives coarsely chopped

1/2 c grated parmesan cheese

Preparation

cook pasta with salt, drain and rise with cold water

whisky mayo and next ingredients

transfer dressing to a bowl, 3/4 of a cup and mix in celery, artichokes, green onions, tomatoes and olives

add pasta then cheese, toss. season with salt and pepper.

serve cold or room temp.
