Ingredients

5 zucchinis

a pinch of salt

a pinch of pepper

quarter cup fresh basil

teaspoon of oregano

teaspoon of thyme

1 tub of ricotta

5 slices of provolone

tablespoon oil

can of drained tomatoes

quarter cup Parmesan

quarter cup Greek olives

oven-proof glass baking dish

Preparation

Slice zucchini into rounds and season.Oil an oven-proof glass baking dish.Put down a layer of zucchini.Dot it with ricotta.put a second layer of zucchini on top and cover it with slices of provolone.Add a final layer of zucchini,pour on canned tomatoes.Top with Parmesan and Greek olives.Bake in a 350 degree oven until top is brown and zucchini is tender(30-50 minutes).
