Ingredients

1/2 lb Chorico

2 slices bacon, cut into 1/2" horizontal strips

1 cup onion, finely chopped

1/2 cup celery, finely chopped

3 cloves garlic, minced

1 tbsp dried oregano

1.5 bay leaves

1 tbsp dried thyme

1 tsp pimento

1/4 tsp crushed red pepper

1/4 cup dry white wine

46 oz container clam juice

2 cups red potatoes, 1/2" dice

14 oz can diced tomatoes

32 oz container fresh chopped clams with juice

Preparation

  • Saute bacon and chorico until rendered, remove from pan with slotted spoon.
  • Saute onion, celery and garlic until golden brown.
  • Add thyme, bay leaf, oregano, pimento and crushed red pepper and saute for 1 minute.
  • Add white wine, deglaze pan and simmer until liquid almost gone.
  • Add clam juice and bring to boil.
  • Add potatoes, reduce heat and simmer until tender.
  • Add tomatoes, bacon and chorico and bring to boil again.
  • Turn off heat and let sit for 1/2 to 1 hour.
  • Bring to boil and add clams. Cook for 2 minutes.
  • Serve immediately.
