Ingredients

1lb Polska Kielbasa or Smoked Sausage - cut into small cubes

Extra Virgin Olive Oil

1 Med. Onion - diced

2-3 cloves Garlic - minced

1 Green Pepper - diced

1 can Black beans

1 can diced Tomatoes (petite size are best)

1 cup corn (canned or frozen)

1 Tbsp “Emerils” Seasoning

1-2 small cans V8 juice or tomato sauce

4 C cooked rice or Orzo Pasta

Preparation

Sauté onion, garlic and sausage in olive oil until sausage renders and onion and garlic are tender. Add Green pepper and sauté a few minutes. Add the beans, tomatoes, corn seasoning and 1 can of V8 or tomato sauce. Simmer all ingredients for 20-30 minutes (can be simmered as long as 60 minutes). Add more V8 or tomato sauce to desired consistency. Serve over Rice or Orzo.
