Ingredients

2 whole eggs

4 oz baby spinach

2 oz tomato, chopped

2 oz avocado, cubed

1 oz soft goat cheese, crumbled

1 tbsp olive oil

Preparation

Chop tomatoes and cube avocado, set aside. Heat olive oil in 12" non-stick skillet. Crack eggs into skillet and fry until done to your preference, transfer to plate. Add spinach and saute until tender, 1-3 minutes. Top fried eggs with spinach, then with tomatoes, avocado and goat cheese. Enjoy!

NOTE: salt and pepper can be added to taste.
