Ingredients

Dry Ingredients:

1 c. buckwheat (gluten-free) flour

1½ c. quick oats

1 c. raisins

1 c. frozen cranberries

1 c. frozen blueberries

2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

1 tsp each of mace & nutmeg

½ tsp each of ginger, allspice, & cardamon

¼ tsp cloves

Wet Ingredients:

2 oz. oil (olive or safflower)

4 oz. honey

4 oz. eggs or cholesterol-free egg product

6 oz. soymilk or other non-dairy substitute

Topping:

1 banana - sliced

Preparation

  1. Preheat oven to 375 °F
  2. Grease & flour a 10-inch cast iron skillet
  3. Measure Dry Ingredients into 2½ qt. mixing bowl, stir
  4. Measure Wet Ingredients into 2-cup Pyrex cup
  5. Pour Wet Ingredients into mixing bowl with Dry, mix
  6. Pour mass into cast iron skillet
  7. Top with sliced banana
  8. Bake for ~30 min. (test with cake-tester to ensure completely baked)
