Ingredients

1 cup butter

1 cup flour + 3/4 cups flour (1-3/4 cups total)

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1-1/4 cups packed brown sugar

1/2 cup granulated sugar

2 eggs

2 teaspoons vanilla

2 cups uncooked steele cut oatmeal

1 cup raisins

Preparation

In a large mixing bowl, beat the butter on medium to high speed for 30 seconds.

In a smaller bowl, stir together 1 cup of flour, baking soda, salt, and cinnamon. Add mixture to the buttery mix.

Add brown sugar, white sugar, eggs and vanilla to mix. Blend 1-2 minutes or until all ingredients are thoroughly mixed.

Stir in oats and 3/4 cup flour.

Fold in raisins (if desired).

Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet.

Bake at 350° for 10-12 minutes or until lightly browned around the edges.

Cool on wire rack.
