Ingredients

2 thyme sprigs

¼ cup cider vinegar

2 tablespoons balsamic vinegar

2 tablespoons minced onion

2 table spoons minced tomato

1 teaspoon habanero or jalapeno pepper

2 pds. Fr. Spinach

Preparation

combine all ingredients, except spinach in bowl. Steam spinach, pour sauce over spinach when done. Sauce left over can be reserved for other veges such as spinach or chard.
