Ingredients
Half bottle fruity white wine
3 T. olive oil
4 sliced green onionsm plus 2 green onions sliced
4 sliced garlic cloves
1 c. seeded, skined, chopped fresh tomato
3 T. butter
1/4 c. chopped flat leaf parsley
2 # fresh mussels, cleaned
Preparation
Saute green onions and garlic in olive oil until soft (2-3 minutes). Add w. wine and bring to a boil. Add mussels, cover and steam mussels until open. Disgard unopend mussels. Remove mussels to a serving bowl and cover. Add tomatoes and reduce wine mixture by half. Add salt and pepper to taste. Finish sauce by stirring in butter until melted and fresh parsley and extra green onion. Pour over mussles and serve with rustic bread.
