Ingredients

STEAMED LIME PUDDINGS 12 Cups

4 Teaspoon of Grated Lime ( if Expensive use Lime & Lemon )

1 Cup of Lime Juice ( if Expensive use Lime & Lemon )

3 Cups of Caster Sugar

4 ozs of Soft Butter

2 Cups of Milk

1 Cup of Double Cream

6 egg yolks * ( keep whites for Merinque ) 6 Whites touch of Sugar ..

½ Cup of Self Raising Flour

Preparation

Whisk all this at the same time until lovely and smooth and then slowly fold in the Merinque Mixture. Place into 12 well buttered and sugared cups the place in Bain Marie and bake at 180* for around 35 mins.
