Ingredients
6 Black Cod - fillets (skin can be on or off, but easier if it is off). 1.5 inches thick
sea salt
Preparation
Wash your fillets and pat them dry. Salt. Bring a buttered or sprayed saute pan to medium high heat. Put the fish flesh side down into the pan. Cook for 2-3 min (just to get a nice golden char on the outside).
Then place the fish in steamer (I use a chinese wooden one) and cook for another 4 minutes.
Remove and place over the coconut rice.
