Ingredients
1 head romaine lettuce cleaned and cut into bite sized pieces
3 cups arugula cleaned and cut into bite sized pieces
1 cup cut cherry tomatoes
1 pound of your favorite steak pan fried or grilled and cooled
1 cup crumbled blue cheese
2 Black Pepper Croccantini crackers
½ cup red wine
3 tablespoons lemon juice
2 tablespoons honey
2 teaspoons salt
1 teaspoon pepper
1 cup olive oil
Preparation
For Vinaigrette: In a blender, mix red wine vinegar, lemon juice, honey, salt and pepper. Once combined, slowly add olive oil while blender is on until emulsified.
In a small bowl, crush the croccantini and stir in blue cheese until coated. In a bowl, combine the romaine and arugula, and toss with ¼ cup of the dressing. To serve, top salad with sliced steak, blue cheese bites, and broken Croccantnini and enjoy!
