Ingredients
(32) oz Marinated Skirt Steak
(4) Tomatoes, sliced
(1) White Onion, sliced
(2) cups Black Bean Puree
(1) cup Guacamole
(3) oz Sour Cream
(3) oz Red Pepper Mayo
ARTICHOKE MARINATE:
(1/2) oz Minced Garlic
(1) oz Achiote Paste
(1) oz Chopped Onion
(1) Guajillo Chili Pepper
(1-1/2) tbsp Lime Juice
(1) tsp Cinnamon
(6) oz Canola Oil
RED PEPPER MAYO:
(6) oz Mayo
(4) oz Roasted Red Pepper
Mixed in Blender until smooth
Preparation
MARINADE:
Saute onion, chili pepper and garlic until soft. Place in a blender with achiote, lime juice, & Cinnamon and start to puree. In a thin steady stream, slowly add oil. Place steak in a bowl, cover with mixture and marinate in a refrigerator for about (3) hours.
Grill steak to appropriate temperature, lightly grill tomatoes and onion. SLice steak into 2" squares. On each of four plates place about (1/2) cup black beans and alternate slice of steak, tomato, onion, stacking on top of one another. Skewer stack with bamboo skewer so it remain erect. Top with guacamole & garnish with fried tortilla strips. Drizzle with sour cream and red pepper mayo.
