Ingredients

8 ounces beef tenderloin

Salt and freshly ground black pepper

1 tablespoon extra virgin olive oil

4 ounces Shiitake mushrooms, sliced

1 tablespoon fresh thyme

2 tablespoons Brandy

1-2 tablespoons Heavy cream

12 French baguette slices

Preparation

Season steak with salt and lots of freshly ground black pepper. Heat oil in sauté pan and when hot, add steak to sear on both sides, about 4 minutes per side for rare. Remove steak and add mushrooms, adding more oil if needed. Sauté until soft. Season with salt and pepper. Add fresh thyme. Remove from heat and add Brandy. Simmer for 1 minute and then add cream. Slice steak into thin slices. Top baguette slices with steak and mushrooms. Serves 4.
