Ingredients

Marinade

1/2 c olive oil

1/2 c red wine vinegar

1/2 c medium dry sherry

juice of 2 lemons

3 tsp ketchup

1 medium onion-chopped

2 tbsp parsley-chopped

1 tbsp fresh mint-chopped

1 tsp rosemary

1 tsp white pepper

1 tsp paprika

1/2 tsp sage

1/2 tsp chili powder

1 tbsp salt

coarsely-ground black pepper to taste

3 lbs meat, cut into 1 inch cubes. (Pork Shoulder and Lamb are traditional, but beef and chicken work well, too!)

Italian hoagie rolls or pita bread

Preparation

  1. Cut meat into 1 cubes. place into large bowl.
  2. Mix all remaining ingredients, and pour marinade over meat. Mix well to coat.
  3. Marinate minimum 8 hours, overnight is best, stirring occasionally to ensure even coating.
  4. Place meat on skewers, (resist the urge to put veggies on)
  5. Cook on a grill or under the oven’s broiler, no more than 5 inches away from heat source, for about 5 minutes. Turn a few times, brush with marinade while cooking.
  6. When meat is done, slide off skewer onto italian roll or pita.
