Ingredients
1 Pound of Squid Sliced in Rings
1 box of Roma Tomatoes
1 Box of Campari Tomatoes
1 Small Onion
Couple Cloves of Minced Garlic
Lemon
Capers
Parsley
Preparation
This is basic, and easy and should be appreciated for it’s simplicity. Start with cubed onion, minced garlic sauted in a small a pan coated with oil and 2 tbs butter. Do not brown onions and garlic. Add cubed tomatoes saute for about 8-10 minutes until half of the water cooks out. Add Squid and cook for about 2 minutes no more. Add capers THEN season with salt and pepper and squeeze fresh lemon juice over. Add Parsley, remove from heat. Add to a dish with a lid and store in a warm area (not hot- turned off microwave works well) for at least 20 minutes. Serve over pasta.
