Ingredients
1 lb. (500 gr.) spinach, washed & dried
2 lbs. (1 kg.) fresh squid, cleaned and sliced
2 tbsp. olive oil
1 large onion, coarsely chopped
1/4 chopped fresh Italian parsley
1 garlic clove, peeled and cracked
1 tbsp. tomato paste (or more)
1/4 cup fish or chicken stock (optional)
Preparation
Wilt spinach for a few minutes in a pan. Squeeze out excess water.
Mix the oil withthe onion, parsley and garlic and heat over low heat in a skillet until the onion just starts to turn golden. Discard garlic.
Add the squid and heat through. Add fish stock if too dry. Add tomato paste (and a little water if not using stock) and simmer 4-5 minutes.
Add spinach and cook for 5-15 minutes longer.
