Ingredients
1 Banana Squash
1 small onion
2 Tbsp butter
2 Tbsp flour
2 Tomatoes
1 can chicken broth
1 can evaporated milk
Suggested spices:
1/8 tsp of each-
pepper
marjoram
garlic salt
ginger
basil
Adjust salt to taste
Preparation
Cut squash into slices. Scoop out seeds and cut off the skin. Cover with foil and bake the squash in a baking dish in the oven until very tender. ~ 1 hour. Mash 2 cups and set aside. While the squash is baking saute the chopped onion in the butter. Add 2 Tbsp flour and two tomatoes that have been skinned and seeded. Pour the onions and tomatoes into a blender with the broth until no lumps remain. Pour back into pan and add squash.
Add spices. Simmer 10-20 minutes. Just before serving add in the can of evaporated milk.
